Meet the Vanilla Slice: such a deceivingly simple name for a delicious dessert that you can enjoy with a good cup of coffee at Little Wave Coffee Co. in Station X, Boracay. The new specialty coffee shop serving classic and fun coffee preparations (order their Flat White and to cool yourself off, their Death Cream is your best bet), and they also serve light meals and heartier fare like fresh pasta dishes all made in-house, sandwiches, wraps, soups, and snacks.

At Little Wave, it’s best to start with some coffee (theirs is arguably the best in the island) but always leave room for dessert. They have assorted cookies and banana breads in different flavors (there’s peanut butter and even a piƱa colada one), ‘slutty’ brownies, and this marvelous sunshiney slice of vanilla happiness.

According to Little Wave’s owners Nowie and Odette Potenciano, they decided to include this classic Australian dessert because they enjoyed it so much during their travels. The pastry will remind us Filipinos of our napoleones from Bacolod, only less flaky. The Aussie bakery staple has the familiar icing on top of the puff pastry, while its filling is much more indulgent than our local confectionery — the vanilla slice boasts of a thick layer of custard filling in the middle, creamy and sweet.

Every forkful gives you more and more, the satisfaction of its sweetness (not too cloying) and smooth texture giving dessert lovers something new do declare a favorite. The ultra-creamy Vanilla Slice really does go well with a cup of coffee, making its stay on the cafe’s menu most welcome. Perhaps if we wish hard enough, we could find a slice back home in Manila. For now, this makes for an excellent pasalubong from Boracay.
