The Smoking Joint: now open at Green Sun along Pasong Tamo Extension, Makati

Chef Dino Dizon first opened The Smoking Joint at a tiny spot along Aguirre in BF Homes, and now the restaurant moves to a bigger space along the busy street of Pasong Tamo extension. Now two storeys high with additional al fresco seating, The Smoking Joint gets a rebirth and with that, an updated menu. Here, the chef wants to highlight smoked meats and the technique itself the way traditional American barbecue joints do it, and combine it with our own local sinugba or inihaw.

Smoked meats here at The Smoking Joint isn't just about the brisket — they serve dishes like Corned Beef Sisig (P355) to showcase the smoking technique in different ways and means, adding flavor depth to familiar dishes. Their smoked sizzling sisig is an unctuous mix of homemade corned beef and chopped pig's face joined by crispy chicharon and bits of brisket; everything's been smoked, making it richer. It's served with flat pan de sal so you can top each piece with the sisig, or the Seasoned Rice (P80) is just one order away. Don't miss out on their Jalapeño Poppers (P255) before you hit their meats — they're bite-sized rice balls similar to arancini, and inside is creamy cheesy goodness with just a hint of heat.

Meats are the main attraction at the restaurant, and here, they feature their house dry rub of a blend of spices, and the meats are left to sit in a 200°F smoke bath cooking low and slow for hours. The Smoking Joint's Pulled Pork (P225/Single, P395/Half, P695/Pound, P195/Sandwich) is a smokey-sweet blend, and as a sandwich, was a great introduction to their smoked meats. The sandwich comes as two pieces of flat pan de sal, similar to a pita bread, topped with pulled pork and slaw. Their Ribs (P375/Single, P625/Half, P1,100/Full) are sticky, the smokiness with just a little tang, and the Brisket (P310/Single, P635/Half, P1,245/Pound) drizzled with mustard is properly smoked and had a lot of that handsome flavor of meat. Single servings of ribs and brisket come with your choice of dinner rolls, flat pan de sal, or fries, which will fill you up pretty quick!

Don't make the mistake of ignoring The Smoking Joint's Chicken (P265/Quarter, P475/Half) because it's one incredibly flavorful smoked chicken. What makes their version quite memorable is that the bird is smoked using green tea and toasted rice. Each bite is soft and juicy, and the distinct smokiness of the meat is paired well with the chimichurri sauce.

Should you need delicious assistance for your meatage, look no further than The Smoking Joint's side of Mac n Cheese (P155). It's a straight up classic–it's not fancy at all, it has no bacon overload nor is it truffled and decked with a dozen kind of cheeses you can't pronounce. It's a simple, classic, and homey dish done incredibly well, the macaroni and cheese served on a skillet, the top part crunchy and irresistible. Don't forget to leave space for at least two desserts — their Corn Bread (P80) and Calamansi Pie have won my heart, and I know these are customer favorites as well. The cornbread is supermoist and served warm, topped with smoked butter; it's cradled by a banana leaf like it was bibingka, and a bite of the bread does reveal hints of bibingka. As for the pie — I'm a sucker for fruity desserts and if you love key lime pie, this one is for you. Four tiny slices of Calamansi Pie pack in so much creamy tartness! You can easily have this one just for yourself and four slices will disappear in no time.
