Fukudaya Japanese Dining: Serving Modern and Traditional Fare at Arya Residences, BGC

The new Japanese restaurant in the neighborhood is delighting Japanese food lovers with its modern take on classic dishes. Innovative renditions and surprising twists await -- especially if you save some room for dessert.

Fukudaya Japanese Dining is a new Japanese restaurant in the BGC neighborhood, delighting Japanese food lovers with its modern take on classic dishes. Innovative renditions and surprising twists await — especially if you save some room for dessert.

Fukudaya is located in a lesser familiar food territory of BGC, tucked inside Arya Residences, the first 'green' residential building in the Philippines. The restaurant will soon be joined by many other food concepts, and this dining hub also has free basement parking to make it convenient for guests. At Fukudaya, three Japanese chefs helm the kitchen, armed with catering experience in Japan. Expect food here to be consistent, produce fresh, sauces and soups made from scratch (like their signature Dashi), and not a drop of MSG on any item, using each ingredient's natural flavor to shine.

The restaurant first opened its doors for dinner service, with set menus and degustation options. Now with over a month tucked under their belt, they have expanded their menu, rolling out a la carte dishes and also opening for lunch. A la carte appetizers bear both traditional and modern options, and as far as raw fish goes, the offering is excellent. Get the Sashimi 9 Shu Moriawase (9 kinds assorted sashimi) to share and it's as good as it gets, the seafood fresh and bright, a mix of Medium Fatty Tuna, Salmon, Snapper, Horse Mackerel, Squid, Mackerel, Sea Urchin, Octopus, and Sweet Shrimp. Soy sauce here is placed on a spritzer, so you can spray a light coating just to have a little seasoning on your sashimi or sushi. Another traditional dish available is the Buta Baraniku to Daikon no Nimono, which had its savory flavor so simple and clean. The balance of pork belly and radish simmered in excellent dashi broth is appreciated increasingly, as you sip and bite more. Order some rice, and elevate this into a full meal.

If you want to up the ante with sushi, a must try is the chef's specialty, Meat Nigiri Sushi Moriawase (P400/3pcs). Three kinds of meat, thinly sliced, is pressed on rice — roast beef, duck, and Wagyu beef tongue. The sushi mastery is not limited to raw seafood, and this sampler satisfies. For a modern twist, Fukudaya's Shiromi Saka no Karupacho Tosazu Jelly (P380) is a great meal starter. Snapper fillet is transformed into carpaccio, finely sliced and decked with tiny pieces of bonito vinegar jelly that add brightness in every bite.

For bolder flavors and filling bites, try the Tori Tataki Yaki Onsen Tamago Zoe (P310). They supersize the traditional Japanese tsukune (chicken meatball) yakitori, the minced chicken burger charcoal grilled and served on a stick. Things get extra luscious with the soft boiled egg, which you can use as dipping sauce, coating the meat with unctuousness that's hard to not love. Another rich entree is the Mero no Kama Teriyaki (P1,250), gindara collar grilled in teriyaki sauce that's filled with punches of flavor that rice seems required with this silky and fatty piece of fish, rather than optional.

In typical Japanese restaurants here, the dessert menu is very lean and less on the creative side, simply serving classics to cleanse the palate. This is not the case with Fukudaya Japanese Dining, where desserts can be the draw to dine here and linger longer. The Kuro Goma Aisu Kurimu (P180) is an absolute delight if you just want something familiar, yet done well. It's two scoops of black sesame ice cream, smooth and silky and generous with the black sesame flavors. We are spoiled with many green tea flavored food right now, and a unique addition to the matcha craze is the Macha Shu Kurimu (P200), three matcha flavored cream puff with a filling of sweet red beans, topped with adzuki paste.

What many have been smitten with at this new Japanese restaurant are a couple of their desserts: one resembles a delicate raindrop, while the other reels in whisky lovers. The Mizu Shingen Mochi (P180) is a transparent raindrop cake that's actually a traditional delicacy in Japan but only recently enjoying fame all over. Its flavor is actually neutral and light and gets most of its sweetness from the soybean powder and kuromitsu. Once you pierce with your spoon, the raindrop collapses and dissolves.

Love single malt? Then you must end your meal at Fukudaya with their Hakushu Single Malt infused dessert. Have the Kohi Zeri (P250) and get spirited away with their version of Japanese coffee jelly — it is infused with Japanese whisky, and served with mangos covered in dark chocolate. The sweetness of the mangoes perks up the light textures of the jelly, strong with coffee and waves of whisky. It's a memorable way to finish off lunch or dinner at the restaurant, having a bit of your alcohol alongside your dessert.
