Experience the Art of Griddle at Flatiron 1771 in Uptown Mall

At Flatiron, the griddle is essential in preparing almost all the dishes including the house specialty.

Flatiron 1771, the newest addition to the other restaurants of 1771 Group of Restaurants – Chateau 1771, Sentro 1771, and Café 1771 – is now open on the ground floor of Uptown Mall. Group Chief Operating Officer and Executive Chef – Vicky Pacheco says the name of the restaurant is an accident since she wanted to bring a New York vibe to the place yet still offer food that's familiar to the Asian palate. She calls it urban comfort food with the use of griddles for cooking.

Nothing beats cooking with a griddle for many professional and home chefs. It might be one of the heaviest cookware but it is almost indestructible – some cooks claim to create wonderful meals using hundred-year-old skillets. It also doesn't require heavy cleaning, just slather some oil and it will last you a lifetime.

The griddle serves as an inspiration for the restaurant. The griddle, also known as a flat iron, is also the name of a popular spot (Flatiron building) in New York known for its trendy restaurants. Flat irons are perfect for sautéing, searing and grilling meats, particularly steaks, and vegetables, while deep-dish skillets can be used for braising, deep-frying and even baking cakes. 

A visit to Flatiron 1771 requires a meal cooked using a griddle for the complete experience. Prep yourself with the Manhattan Seafood Chowder (P290) while waiting for your hot off the griddle mains. It is a tomato-based chowder with fresh fish chunks, clams and bacon. If you want something lighter and has the same fresh taste, try the Pomelo Orzo Salad (P300), lettuce on a bed of orzo pasta topped with chunks of pomelo, crumbled parmesan cheese, fried spinach and drizzled with lemon vinaigrette.

GAB Pizza (P450) that's short for garlic, anchovy and brisket is a tomato-based pizza with chunks of garlic and shredded brisket on top of a thin crust dough that's great for sharing with friends. Pour in a few drops of hot sauce and enjoy the garlicky and smoky flavor of the pizza! Another dish that's great for sharing which contains two staple comfort food is the Pizziola Pasta (P395), bowtie pasta coated with napolitaine sauce, bell peppers, salami and bacon covered with cheese and gratinated. Definitely an ultimate pizza experience in pasta form.

Chef Vicky Pacheco says using a griddle is the easiest way to cook food quickly. In fact, at Flatiron, the griddle is essential in preparing the specialty of the house called Flatiron Brisket 6 (P850) – fork-tender beef brisket slow-cooked for six hours in aromatics then seared on the griddle to order, served with buttered brown and red rice and fresh cucumber-carrot slaw. Another noteworthy dish is the Flatiron Steak (P1250), a 300-gram steak cut seared on the griddle with herb butter served with green pea mashed potato on the side. The meat is flavorful as it is but if you want to be extra adventurous, dip the meat into the cherry tomato-Worcestershire-balsamic sauce for an extra kick.

There are also a few other must-try dishes that aren't cooked on griddles like this broiled Salmon (P575) that's glazed with Japanese miso served on top of sautéed bokchoy and buttered rice. Planning to drop by in the afternoon? Chomp on the Flatiron Burger (P525), a U.S. beef chuck patty flavored with herb butter and some grilled tomato and onion sandwiched in a potato bun that's made in-house served with dill pickle and thick-cut fries.

One dessert is enough to share! The Intense Brownie Burger (P560) is definitely not for the faint-hearted as it is coffee ice cream sandwiched between two Swiss chocolate fudge brownies on a cream cheese which actually balanced out the sweetness of the baked dessert. To finish it off, it is drizzled with chocolate mocha sauce and toffee sauce spiked with cashew brittle shards. Now that's what you call a dessert that's to die for!
